Cacao Covered Goji Berries

Chocolate (Cacao) Covered Goji Berries

Begin by setting up your work space as, once you make the cacao covering it will set up quickly and you will want to have your space ready to work and all necessary ingredients and equipment ready.

Have a very large mixing bowl as you will want to mix well to be sure all berries are covered.

About 12 oz to 1 lb. Goji Berries ( preferably organic)

Once you have all this assembled you can prepare the Cacao covering. This is good for raisins also and quite tasty.
In fact you can use this for any fruit covering, I have used it for strawberries, and raspberries also.

1Cup Cacao Butter (Melted in Hot water)
½ Cup Cacao
½ Cup Agave
¼ teaspoon sea salt (I use and recommend Himalayan Rock Salt it is simply the best flavor enhancer)
½ Tablespoon vanilla
Place all your goji berries in your large mixing bowl and set aside.
Blend the above ingredients well in the blender until it is smooth and creamy ( a bit shinny).
Pour immediately over the goji berries in the bowl, and gently stir until all goji's are covered. Let sit for about 1-2 hours to be sure the cacao is set up. If you have clusters, just break them up and store in an air tight container.
Once you have broken them up if there is cacao mixture that is not covering berries and can be remelted to cover more riasins or berries , just remelt it. To do this you put it into a container and set the container in a larger container of HOT water, let the cacao mixture remelt and re use it. Just be sure not to get water into your cacao mixture, as water on chocolate cause it to seize and become clumpy.
